This will get your tastebuds going after you've done your Saturday morning chores!
Bacon and strawberries on banana omelette with maple herb dressing. Side of toast if you like!
1. Pick some basil and mint from you garden 2. You'll also need eggs (free range tastes better - 2 per omelette), bacon, a banana, a couple of strawberries (pick them from your garden too if you have them :-), a dob of butter for frying, some maple syrup (the real thing please - none of this maple flavoured syrup thanks) and some white vinegar. 3. Whisk the eggs in a small bowl. 4. Put a small dob of butter in an omelette pan and heat it up (moderately high) 5. Slice up about half a banana for each omelette and place the pieces in the sizzling butter. Allow to sizzle for a minute before you pour the whisked eggs over the top. 6. Place a lid over the top with a small gap and turn the heat down quite low. 7. Meanwhile place about 1 TBSP of vinegar and 2 TBSP maple syrup in a cup or small jug (creamer is good). Mix. 8. Chop mint and basil (2 or 3 mint leaves and 4 of 5 basil) and place into the maple/vinegar mixture. Give it a stir. 9. Slice or chop the strawberries and mix into the dressing. 10. Make sure your omelette isn't burning!!!! 11. If you can turn the omelette I'll be very impressed - I couldn't! I messed it up. So...you can either give it a go OR put it under a grill to finish the top OR let the top stay slightly undercooked. Your choice babe. 12. Remove the omelette onto your plate and put the bacon in the frypan (turning th heat up again). Sizzle bacon to your liking. 13. Place the bacon on the plate next to or atop the omelette, the tip the strawberries and dressing on top. 14. Voila! 15. Gourmet brekky for your Saturday morning!
Notes.... It was delicious! I used plain white vinegar - you could try apple cider vinegar or balsamic vinegar if you like. The herbs taste great with the banana, bacon and strawberries! Get out your newspaper or crossword puzzle, put on the coffee pot for afters and relax! :-)
Being quite used to self-promotion as a DIY artist (singer/songwriter) it isn't hard to find info about me on a google search. What you may not know from the various web pages is that I am a wife and a mother of two gorgeous boys. Once a registered nurse I have also spent time teaching singing. Although there were many aspects in those work scenarios that suited me, it was nevertheless a little bit like “doing time”. Although I no longer regret or resent the twenty years of waiting and working. "Anything that enriches or enlarges you as a person will enrich and enlarge you as an artist. Armed with a little more maturity, a lot more sense of my identity, I seems to be finding my voice.
